
Holy Guacamole
A great guacamole recipe was always a bit of a mystery to me until a dear friend Sandy Cohen shared her secret with me. Now I’m going to make your next guacamole a holy experience!
INGREDIENTS:
- 4 ripe Avocado
- 1 Lime, zest, and juice
- 1/2 cup white Spanish Onion, chopped fine
- 1-2 Jalapeños, remove seeds and chop
- 1 bunch of Cilantro, chopped
- 2 Italian Tomatoes, remove inner part and chop
- 1-2 Garlic Cloves
- 1/2 tsp Salt
DIRECTIONS:
- Place the avocado in a large bowl, and lightly mash with potato masher, or fork, along with the zest, the lime juice, and salt.
- Mix in onion, tomato, jalapeños, stir.
- With a zester, grate the garlic into the mix and add the cilantro.
- Give a final stir.
- Taste. (more lime and salt to your taste)
- Cover with saran wrap, placing wrap into the bowl over the guacamole to keep that bright green color.
- Serve with Tortillas chips and sliced veggies.
If you haven’t devoured this at your gathering, it can be stored for two days in the refrigerator.
