
Delicious Food (Full Proof Fish Recipe)
Cooking and delicious food are very important ingredients in my life.
I do love eating out sometimes. It is a treat to find a special restaurant and have an evening out with friends. But, I learned a long time ago that really good food comes from my own kitchen.
I like having control over what is in my food, how it looks, and especially how it tastes.
Spending time in my own kitchen, surrounded by family or friends, well, that’s the best!
Here is one of my favorites:
FULL PROOF FRESH FISH
(serves 4)
Ingredients:
- GROUPER (Black, or Yellow-Edged is best), or SNAPPER – 4 filets
- RED ONION ( 4-8 thin slices)
- LEMONS ( 1-2 fresh)
- OLIVE OIL (2-3 tablespoons)
- BUTTER ( 1-4 T, according to preference)
- SEASONINGS: salt, pepper, garlic powder
Preparation:
TIP: Especially when entertaining, it’s good to do the prep work earlier in the day.
- Rinse the fish, checking for and removing any tiny bones. (I sometimes need a tweezers for this.)
- Pat the fish dry. Place on a plate, squeeze some lemon over, season with salt, garlic powder, and pepper. Cover and refrigerate.
- When ready to prepare fish, Set Oven temp to 350 degrees.
*This fish will only take 10 minutes, so have everything prepped and ready to go before you begin cooking the fish.
Place an oven-proof pan on a Med-High heat on the stovetop. Place oil in pan. When shimmering, place the fish filets, onion side down in the pan. Cook for 3 minutes.
You can season this second side with salt, garlic powder, pepper.
Flip Fish at 3 minutes, squeeze lemon over, drop some pats of butter around fish in pan. Place fish in the heated oven. (Grouper 7-8 minutes, Snapper 6-7 minutes)
Remove fish from the oven, (remember the handle is very hot). Plate and enjoy, with your favorite side dishes.
I often make CREAMED CORN and place the filet on top, which makes a delicious and beautiful presentation for guests.
Add a fresh green salad on the side. Yum!
CREAMED CORN
(serves 4)
Ingredients:
- CORN – 4-6 EARS (cut the corn from the cobs) ( you can also use a bag of frozen corn)
- LEEKS- 1-2 (chop the white part finely)
- OLIVE OIL – 2 Tablespoons
- Salt, pepper, garlic powder
- HEAVY CREAM – about 1 cup
Preparation:
- Take a medium size fry pan, or sauce pan and place on medium heat. Add the olive oil.
- When hot add the chopped leek and saute just until soft. Do not let the leeks brown.
- Add the corn and saute for a few minutes to combine flavors, adding seasonings as you prefer.
- *If you use frozen corn, cook a little longer to soften it. (It will thaw out, so don’t worry about that).
- Pour in the cream, but not to cover the corn.
- Bring to a slow boil. Then, reduce the heat to medium-low. Simmer for 1-2 hours.
- Serve and enjoy.
