
Smile, and Say “Cheesecake Flan”
The dessert recipes that I love the most have fewer ingredients, are simple in preparation, and have a wow factor that brings a smile to the table. This Cheesecake flan is one of those exceptional desserts that I believe will become a favorite, and bring a smile to your face.
INGREDIENTS:
- 3/4 cup Sugar
- 1/4 cup water
- 5 Eggs
- 1 8oz. Cream Cheese
- 1 can Sweetened Condensed Milk
- 1 can Evaporated Milk
- 1 tsp Vanilla
- Pinch of salt
TOOLS:
- Loaf pan (may use a Bundt pan)
- Roasting pan
- Large Blender
- Platter for serving flan.
DIRECTIONS:
- Set oven to 350 degrees.
- Place a sauce pan on medium heat.
- Pour sugar and water into the pan.
- Do not stir.
- The water will slowly boil until the sugar is all combined and becomes a light brown color. Remove the pan from the heat and pour sauce into the loaf pan.
- Set the loaf pan into a roasting pan. Pour 1 inch of water into the roasting pan.
- In a large blender combine the Eggs, Cream cheese, Sweetened Condensed milk, Evaporated Milk, Vanilla, and salt.
- Blend.
- Stop and scrape sides with spatula.
- Turn to Higher blend, for 1 minute.
- Pour carefully over the sugar mixture, using a large spoon to catch the flow into the loaf pan.
- Set both pans into the oven for 55 minutes, (50 minutes for bundt), or until a light brown top forms on cheesecake. Don’t overcook.
- Set on a cooling rack.
SERVING & STORAGE:
- Cover pan with foil. Place in refrigerator to chill.
- May be made days ahead and kept chilled.
- When ready to serve, uncover and run a knife carefully around the edges of loaf pan.
- Tip the cheesecake flan carefully onto the platter, allowing the sugar sauce to pour evenly over the flan.
- Add a decorative touch to grace the platter and Serve.
